Southwestern Vegetable Chowder!

This delicious southwestern vegetable chowder is packed veggies and perfect for the days you're craving hot comfort food!
Ingredients: 
3 tablespoons of extra virgin olive oil 
1 cup of diced onions
1 cup of diced celery 
1/2 cup of all purpose flour
1 tablespoon of chili powder
1 1/2 teaspoon of ground cumin 
1 teaspoon of dried oregano 
1/4 teaspoon of sea salt
4 cups of vegetable broth
1 cup of whole milk or soy milk
2 cups of diced sweet potato 
2 medium red or green bell peppers diced
2 15oz of rinsed black beans
Garnish with roasted pepitas and lime

Directions:
Heat oil in large pot over medium heat,add onion and celery,cook,stirring often until soft and browned so about 3 to 6 minutes.
Sprinkle flour,chili powder,oregano,cumin and salt over the vegetables and cook for about another minute,add broth and milk bring to a boil,stirring often. 
Stir in sweet potatoes and peppers until soft and bring to a simmer,uncovered for 12-15mins.
Add black beans and cook for about 4 mins,serve and garnish with lime,pepitas and cilantro.
