Tomatillo Salsa Verde

With tomatillos in season right now, its best to add a fresh salsa verde to just about any dish this summer. Perfect topping on any barbecued meat or just a chill evening sitting out with your chips and fresh salsa!! I recently bought a bag of tomatillos from Victoria's Farmers Market and whipped up my own delicious salsa verde with this recipe!

  • 1 lb tomatillos
  • ½ medium onion, quartered
  • ½ cup cilantro, chopped
  • 2 Jalapeno peppers
  • 1 tablespoon lime juice
  • pinch of salt
  • pinch of sugar


  1. Remove husks and wash tomatillos well.
  2. Cut in half and place on a baking sheet.
  3. Broil in oven until skins become well-roasted, about 7-10 minutes.
  4. Remove from oven.
  5. Depending on your preference and age of the pepper, stem and seed to reduce the amount of heat.
  6. Place all ingredients in food processor or blender.
  7. Process until well-combined.
  8. Serve immediately or store in an airtight container in the refrigerator.
