Hello everyone! Well, the weather has started to get a bit chilly and the holiday season is definitely in full effect. Most folks even have their tree's up and decorated by now. And we all know what happens next...The delicious egg nog starts too flow.
Well, below is a recipe that is yummy, will definitely get you in the holiday spirit and most importantly is quite healthy for you. Just omit the liquor and it is great for the kiddies too! WHAT YOU’LL NEED
3 cups organic kefir4 eggs1/3 cup sugar + 1 teaspoon1/2 teaspoon freshly ground nutmeg + extra for garnish
3 ounces bourbon
HOW TO MAKE IT…
Separate eggs. Beat the egg yolks with a mixer until they lighten in color. Add 1/3 cup sugar and continue to beat until sugar is completely dissolved. Set aside.
In a saucepan, bring the kefir and nutmeg to a low boil. Remove from heat and gradually temper the hot kefir into the egg yolks. Then return mixture to the pot and cook until it reaches 160 degrees Fahrenheit or coats the back of a spoon. Remove from heat and stir in bourbon. Chill in refrigerator.
In another mixing bowl, beat the egg whites until soft peaks form. Slowly add 1 teaspoon sugar and beat until stiff peaks form. Whisk the egg whites into the chilled mixture and pour into a glass. Sprinkle with fresh nutmeg and serve.
