Fall Succotash Salad w/a Spicy Jalapeno Dressing:
Ingredients:
1 tbs butter
3 cups of corn
2 cups of baby Lima beans
1 small yellow onion thinly sliced
1 small red onion diced finely and rinsed
1 tsp of garlic, minced ( 1 clove)
1 red bell pepper, small diced
1 zucchini diced into bite size pieces
1 yellow squash, diced
1 cup of cherry tomatoes, halved
1/4 cup of Italian parsley chopped
salt to taste
ground black pepper to taste
Dressing:
1 cup of cilantro chopped
2/3 cups of olive oil
1/3 cup of vinegar
1/4 cup of lime juice
1 jalapeno,diced without seeds if preferred.
