Sweet Potato Sliders with Cinnamon Cashew Cream!
Ingredients:
-1 large sweet potato
-1 tbsp of coconut oil
-1/4 tsp of cinnamon
-1/4 tsp of sea salt
-1/2 cup of cashews
-1/2 cup of water
-1 tsp of honey
Instructions:
Preheat oven 425 degrees. Slice the sweet potato into 6-8 slices,1/2 inch slices.
Drizzle 1 tbsp of melted coconut oil and sprinkle cinnamon and sea salt over the sliced sweet potato.
Bake for 30 to 35 mins or until tender then set aside.
For the cream topping; 1/2 cup of cashews mix with 1/2 cup of water,1 tsp of cinnamon and 1 tsp of honey,blend on high until creamy. Then dollop on top of the sweet potato slices,serve and enjoy!!
