Summer Grill Recipes **Vegan Friendly**

Summertime can mean less time in the kitchen and more time enjoying warm summer evening outside by the grill! Not every outdoor barbecue has to revolve around chips,burgers and hot dogs. Here are a few summer recipes that are sure to be BIG on taste and not heavy on the stomach!

                                                             Lime Grilled Avocados
Ingredients:
   -1 avocado (1 feeds two people, so more depending on how many people there will be.)
   -Extra virgin olive oil
   -Lime wedges
   -Kosher or Coarse Salt and Coarse black pepper

Instructions:
   -Cut avocado in half length wise and remove seed. Brush with extra virgin olive oil,squeeze lime juice over and season with salt and pepper.
   -Place face down on medium heat grill and cook for 4-5 mins or until warm grilled marks appear. Use a thin spatula instead of tongs to remove avocado from grill to avoid the avocado to sticking to the grill.



Grilled Corn with Chile and Lime

Ingredients
-Extra virgin olive oil for brushing
-6 ears of corn with husks and silk removed
-Lime wedges for serving
-Coarse Salt for serving
-Chile powder for serving

Instructions:
-Preheat grill to medium heat and brush hot grill with olive oil
-Grill corn,turning occasionally until kernels are tender and charred in some spots,most time is about 20 minutes.
-Transfer corn to serving plate and serve with lime wedges and coarse salt with chile
